Bacon, Egg, Cheese, and Jelly Sammich

Simple and easy breakfast that my son loves.

  1. Fry up 2-3 slices of your favorite brand of bacon (ours is Sugardale Thin sliced), per sammich.  Drain grease til there’s just enough to cover the bottom of the pan.  (I use a small 8″ frying pan)
  2. Whip up your eggs (2 eggs per person), seasoning with a garlic powder/pepper combo. Mix in about 1/8 cup of shredded cheese (you can use american,  tho I prefer a 4-cheese combo)
  3. pour egg mixture into hot bacon grease, let sit for about 30 seconds before you start scrambling.
  4. Scramble your eggs, making sure to mix the cheese thoroughly.
  5. When done, place on a plate to cool a bit. (My son has a sensitive mouth and doesn’t like hot foods)
  6. Toast or grill your bread (we use Schwebel’s  ‘taliano bread), butter, then spread a thin layer of your favorite jelly on one slice.  (We use strawberry preserves).
  7. lay your eggs out on the toasted/buttered/jellied slice, then lay your bacon across that, cover with the other slice of bread, and cut in half.

There is your breakfast sammich!  :D
